Andouille

Our Andouille is a smoked Cajun style sausage link made with pork shoulder and San Giacomo Bacon. It is strongly seasoned with the garlic, onion, and cayenne then heavily smoked over Applewood and Hickory wood chips. Perfect for Cajun dishes and pairs well with seafood. Add to soups, rice dishes, or even to spice up a pasta.  Sold as 2 lb. packs in a 3/1 all natural hog casing.
