Pancetta Rollata

Our Pancetta Rollata is a fresh, unaged, and uncooked Duroc Pork Belly. We trim this to size and rub it with a Piemontese style spice mix consisting of nutmeg, bay, garlic, and pepper. San Giacomo Pancetta Rollata is cured for seven days, rolled, and ready to be cooked.
